No-Bake Peanut Butter and Chocolate Chip Cornflake Bars

A match made in heaven.  (Actually, today it was a match made in my mixing bowl!)

Thanks to Carolyn over at Care's Kitchen, I was inspired to make these simple bars after seeing the photos of them on her blog.

As I was reading through the recipe, I was super happy to see just how incredibly easy these are to throw together!  Literally, I don't think I was in the kitchen for more than ten minutes!

Ingredients:

1 cup light corn syrup
1/4 cup sugar
2 cups creamy peanut butter
5 cups corn flakes
1 cup chocolate chips

Directions:

Spray a 9 x 13 baking dish with non-stick spray.

Pour cornflakes into a large mixing bowl.  Set aside.

Combine and heat sugar and corn syrup in a medium sauce pan until boiling.  You're just wanting to make sure the sugar is fully dissolved.

Remove from heat.  Working quickly, stir in the peanut butter.


Pour mixture over cornflakes.


Stir to coat.  Fold in the chocolate chips.  The heat of the peanut butter mixture should be just hot enough to begin to melt the chocolate chips.


(If things start to cool too quickly and it all becomes difficult to stir, pop your bowl into the microwave for about 15 seconds to loosen everything up a little.)


Spoon the mixture into your baking dish and press down with a rubber spatula.

Cover with plastic wrap and place in fridge to cool and set ... about one hour. 

Remove from fridge, cut and store in an air-tight container at room temperature.

  1. When I was at Angela's this morning I saw these and had to try one because they looked so yummy. They were so good I had to take one home for later. If you're a chocolate and peanut butter lover, like myself, you've gotta try them! Delicious!!!

  2. Oh My Gosh!! These bars, look out of this world!!! I want to make them now!! However, I think I would eat the whole pan in one sitting! Awesome recipe! I'm going to bookmark it to make later!

    1. Hi, Jennifer! Love the name of your blog! Just visited it and "liked" you on FB! It's early morning here, so reading through your pear oatmeal recipe had me wishing I had a big bowl of it to dive into this morning! ;)

      Yes, these bars are yummy! They disappeared so quickly in my house! I will be making more as soon as I make a run to the store for more peanut butter! They are so simple to make, but we loved them!

  3. I just made these yummy bars! They're similar to a bar that I make with Rice Krispie cereal that has a chocolate topping instead of mixed in with the cereal. Thanks for the recipe. I'll be taking them to our youth group event this weekend. (If they last long enough)!
