Ham and Cheddar Scones

Let me just say that I could barely pull myself away from these fresh-out-of-the-oven and oh, so scrumptious scones to even write up this post.  Seriously.  These babies are so amazing.  As I write, I have a big pot of cheesy potato chowder on the stove to buddy up with these scones for our dinner soon.


If you've never made scones, they are pretty much similar to a biscuit.  They are flaky and tender just a like a good biscuit should be.  They get a little toasty on the exterior, but the interior just melts in your mouth.  Most of the scones I've ever made have been sweet like, my Blueberry Scones with Lemon Drizzle Glaze.  I swear every time I make any type of scones that I will double the batch next time, but I never do.  I just know I would really overindulge then.

These Ham and Cheddar Scones make a great accompaniment to soup, but are, also, fabulous as-is with a little butter for breakfast. You can jazz these up any way you like - a little garlic powder or fresh herbs added in would be super yummy.

Dried Cherry and Sliced Almond Scones

 
I have a slight obsession with scones. (Flip flops, iced tea, Tim McGraw, Law & Order: SVU, amaretto sour cocktails, Adam Levine and Mexican food may, also, fall into the obsession category in my world, but we'll leave those topics alone for the time being.)


I always order scones in any little coffee shop or bakery that offers them.  And, I regularly swear that I'll double the recipe next time I make scones at home, but I always forget ... then, live to regret it.  Why?  Because most scone recipes only yield about eight servings.  That's never enough.  Ever.

These scones are tender, buttery and flaky with just the right amount of sweetness.  So many people think that scones are difficult to make at home.  I promise you that they are not.  The most important factor to making scones is keeping the butter as cold as you possibly can throughout the whole preparation.  Scones come together and are in the oven in a matter of like, ten or fifteen minutes, so they are not time-consuming to make at all.
 
For these scones, I took my blueberry scones recipe and tweaked it a bit.  And, even though the name of the recipe says cherries, I actually used a combination of dried cherries and dried cranberries today because I love the combination of the two. And, I added in sliced almonds, but you could omit if you're not into nuts.  Chocolate chips would be a good substitute or addition - yum!

Yields 8 scones.

Oatmeal Chocolate Chip Scones with Orange Drizzle Glaze

 
Scones are one of those things that can be thrown together pretty quickly and easily.  So, I often make my Blueberry Scones with Lemon Drizzle Glaze for us for breakfast or to have to snack on during the weekends.  The problem is that my teenage daughter, Allanah, hates blueberries, so I set out to make a scone with ingredients that she would like.  The result?  Make 'em with chocolate!


Pair that with some oats for texture and some orange zest and juice for a refreshing, subtle citrus kiss ... and I think we've got ourselves a winner!

Making scones is pretty much like making biscuits.  The less you "work" the dough, the better!  When you first pour out the dough onto your floured surface, it may look like it will never come together.  I promise it will!  And, you want to leave lots of chunks of cold butter in the dough to create the flaky pockets like we all adore in the best biscuits, too!  I place my scones in the freezer for about 5 minutes prior to baking ... just to ensure that the butter flecks/chunks are very cold before baking.

Blueberry Scones with Lemon Drizzle Glaze

Blueberries and lemons collide in this simple-to-make scone recipe. The dough itself requires just a handful of basic pantry ingredients - flour, baking powder, sugar and salt. Fresh lemon zest added to the dough perfumes the scones with a hint of citrus. The addition of butter and cream make these scones super flaky and tender. Blueberries get folded in, then eventually burst into juicy perfection during baking. Once cooled, a simple powdered sugar and lemon juice glaze gets drizzled atop each scones - this is the component that really drives home the tart, zippy, citrus notes.
These scones are just divine. I kick myself every time I make these that I didn't double the recipe. Maybe that's actually a good thing. With a good dose of heavy cream and lovely little bits of real butter, they probably aren't the healthiest thing I could be eating. But, they sure are heavenly, flaky triangles of loveliness.
Regarding the blueberries, I have made this recipe with both fresh and frozen blueberries. Either works great. If I use fresh, I do pop them in the freezer for about thirty minutes prior to incorporating into the dough. This helps the blueberries "hold up" a little better during the mixing and baking process so that the dough doesn't become too discolored. If using frozen, bagged blueberries, use them straight from the freezer.

Yields 6 - 8 scones {depending on how big you choose to cut them}.
