I have a smaller crock pot, so I halve the recipe, but it still turns out phenomenal. The time saving tips really do come in handy when I’m in a rush in the morning. I’ve gotten creative with the spices over the years, but the original recipe is perfect as is. Keeping the veggies on top kept them from being mushy. I cooked it 9 hours, made gravy and ate until I was miserable😁. I added 5 cloves crushed garlic...Excellent recipe. I added 5 cloves crushed garlic (put on top of meat before layering in vegetables (I do this with my corn beef and love the flavor it adds to meat), 3 extra stalks of celery because we love roast celery (total 5 stalks), used 1 1/2 Tblspn Herbs de Provence (nice recommendation thanks for Oct 22 update) and made my own "steak seasoning" by using 1/2 Tblspn of each spice listed above in recipe. Used 1 can of Campbell's beef consume ilo just broth for stronger flavor. I cooked in dutch oven pot in oven at 275 degrees Convection Roast settingg for 5 hours. The celery will release alot of water so 2 1/2 hours in I used the baster to pull out about a cup of liquid so I wasn't "boiling" the meat. I checked on it occassionally to monitor the liquid content and re-basted meat since my convection roast is a dryer type heat for cooking. This recipe was fantastic. Made it for the in-laws for Christm...So delicious!! Made it for the in-laws for Christmas lunch/dinner. I used the original recipe ingredients (rosemary, steak seasoning and thyme). Just tasted it after putting it in the slow cooker at 8am and cooking for 6 hours on low and it’s amazing!! Can’t wait to serve it to my guests. Thanks for posting this recipe.
