Veggie Confetti Wraps

Oh, my lawdy ... I am so craving warm weather. While I cherish steamy comfort food dishes during these chilly winter months, I've been making a few of my more-summery recipes (hello, Veggie Overload Pasta Salad ) this past week in an effort to fool my brain into thinking sunshine and greenery have arrived. We've had one heck of a winter here in Michigan. And, may I just say that I am so, so over it! I am incredibly ready for salads, cookouts, flip flops and lounging by the pool.

Of course, hit me up say, mid-August and I'm sure I'll be complaining about the humidity and mosquitos.


These Veggie Confetti Wraps were something I developed recently in homage to that traditional crescent roll-style vegetable pizza that so many of us know and love during the summer months. This, however, is made with one of my favorite ingredients - Joseph's Flax, Oat Bran & Whole Wheat Lavash. You could use any type of soft tortillas or wraps if you cannot find Lavash. I find it easily at Wal-Mart and other major supermarkets - usually in the deli/bakery section or sometimes in the bread section for around two dollars for a four-pack.

Cut into pinwheels, these would be so fun for a party. These would be great to take to the beach in the summer or to enjoy pool-side. Or, you can cut the wraps simply in half if you're just utilizing them for lunch.

Ingredients:

FOR THE SPREAD -

8 ounces cream cheese, softened to room temperature
1 teaspoon dried dill weed
1 garlic clove, peeled and grated (use a little garlic powder instead if you don't want a strong garlic flavor)
1/8 teaspoon black pepper

VEGETABLES  -

1 carrot, peeled and chopped
1 green onion, chopped
1/8 red onion, finely chopped
1/2 cup chopped broccoli
2 mini sweet peppers, chopped (any color)

2 soft Lavash breads (or 3- 4 soft tortillas)

Directions:

Mix the spread ingredients in a small mixing bowl. Lay out the Lavash bread onto a clean work surface. Spread the cream cheese spread in an even layer all the way to the edges of the Lavash. Sprinkle on the veggies in an even layer.  Tightly roll up the Lavash. Wrap tightly in plastic wrap and allow to firm up in the fridge for, at least, thirty minutes.

Using a sharp knife, cut into desired sizes. Cut into small pinwheels for service at parties, for example. Or, serve as whole wraps if utilizing for lunch.

Here's what the Lavash looks like that I buy. It is great for wraps, tacos or using in place of dough for flatbread-style pizzas. My kiddos and I like to spread it with some peanut butter, sprinkle on some mini chocolate chips and roll it up for a snack, too.

  1. So fun and colorful! These are totally making me DREAM of summer, because this is something I would make, and then call it dinner. Because that's what I do in the summer. I've seen those lavashes (lavash? what's the plural?) at the store, but have yet to try the. They look great!

    1. I've made these three times in the past couple of weeks ... I've kinda been living on them for my lunch while the kids are at school. So good!
