We have a little Chinese restaurant in a town close to our home. It's a buffet-style place. I do like Chinese food, but have never been impressed with the quality of their food there. Several years ago, I declared to my kids that I would not take them back there even though they have always claimed to "love it." Inevitably, about once or twice a year, they talk me into eating there "just one more time." What cracks me up is that they only like going there for a few basic items. With the exception of my ten-year old son who loves all kinds of Chinese dishes and has a pretty diverse palette, my other kids fill up their plates there with the following five items: plain rice, white-meat chicken chunks (breaded and with no sauce of any kind), finger jello from the dessert buffet, deep-fried doughnuts and a scoop of ice cream before we leave. Seriously. That is my girls' idea of a trip to a Chinese restaurant! Pretty Asian-y, huh?
So, when I was making this recipe, I was concerned that my girls wouldn't like it. But, I was wrong.
Plates cleaned! "Seconds" requested!
Although the chicken in this recipe spends the majority of its time in the oven, there is a quick step of flash-frying it in a tiny bit of oil before it ends up in the oven. Therefore, I really wasn't comfortable including the word baked in the title of the recipe. But, I'm telling myself that this has to be a tad bit healthier than take-out since it is not completely cooked by way of deep-frying and I get to control the ingredients.
UPDATE 4/9/13: I have received comments and emails concerning the fact that I present this recipe as something "Chinese." Yes, I am aware that sweet and sour chicken is more of an American idea of what Chinese cuisine is, but since it's something here in America that many of our "Chinese" restaurants do serve, I like that I am able to make a version at home that we absolutely love. (But, yes, I am aware that this is not authentic Chinese food.)
P.S. We all agreed that this is amazing and better than any sweet and sour chicken we've tried in any restaurant.
