I know you're probably thinking that potatoes on pizza sounds quite strange. I thought so, too! That is, until I tried it. I first had potatoes on a pizza many years ago during a Girl's Night Out with some friends. It was divine. I had never tried my hand at making it at home ... until now. And, I wasn't disappointed!
This is such an easy and wallet-friendly pizza to throw together. Just a couple of red-skin potatoes, a little fresh mozzarella, a head of roasted garlic and some basil come together with a little olive oil and seasoning. I usually purchase frozen pizza dough, but you could use homemade or even refrigerated pizza dough (in the tube). This pizza can be made into a rectangle, oval or round.
Serves 4 - 6.
1 pizza dough
Cornmeal, for dusting pan (optional)
1 head roasted garlic, removed from skin and lightly mashed with a fork
3 - 4 ounces fresh mozzarella
2 - 3 red-skin or baby yellow potatoes, scrubbed and sliced paper thin
1/4 onion, sliced paper thin
3 - 4 leaves fresh basil, torn in pieces or cut into ribbons
Crushed red pepper flakes
Crank your oven up to 475 degrees. Prep a large baking sheet or pizza stone by spraying it lightly with non-stick spray or coating with some olive oil. I sprinkle on a little corn meal for dusting, as well.
Press out the pizza dough into desired shape and thickness onto baking sheet or stone.
Drizzle on a little olive oil and rub it around to coat top of dough. Season lightly with salt and pepper.
Spread on the mashed garlic. There won't be enough to completely cover dough, but just get it spread on as evenly as possible.
Place some dots of torn mozzarella all around on top of dough, but do not completely cover.
Lay out the potato slices, then scatter on the sliced onions.
Top with some additional torn mozzarella, then drizzle on a little more olive oil and top with some additional black pepper.
Bake for 10 - 12 minutes, rotating pan once halfway through baking. Remove from oven once crust is crisp and top is blistered.
Top with fresh basil and red pepper flakes. Cut and serve immediately.
